Award winning Joyo brewery was founded in 1895 and is a 4th generation brewer. They are based in south Kyoto, a rich natural area blessed with a temperate climate and on the Kizu river.

They focus on producing the highest quality Sake in small batches.

They use water drawn from their own well 100 meters underground and they grow only the highest quality 5 million stone and Yamada rice. The management stands by traditional brewing techniques as they believe it produces the purest Sake. Their brewers are highly skilled 40 year veterans of their craft.

Most of the work is done by hand using traditional methods. They put their heart and soul into each bottle. They believe in locally sourcing and supporting local companies wherever possible.

Their Sake is noted for it’s fresh and striking impression after extraction, firm rice flavour and refined acidity.

The best Sake produced from one of the very few breweries still using a traditional manual press (shibori). To obtain the absolute best Sake this Daiginjo is made with the authentic mesh drip bag method. This natural, unforced, time-consuming style produces a much cleaner Sake devoid of off-flavours.

Junmai Daiginjo 39 has a Ginjo fragrance similar to green apples and melon and is gentle and comfortable. The initial sweetness quickly develops into a well-balanced flavor with the umami and acidity leaving a crisp, rounded, slightly dry aftertaste from the use of soft water.

This Sake works particularly well with sushi and soba.

A limited edition sake. The finished Sake has a very premium taste. It has a calm gentle fruits scent similar to pears and melons and a fresh and firm body. The taste is pure, smooth with a rich acidity that slowly spreads across the mouth. With a well-balanced flavor and elegant sharpness it is rich and light, mellow and refreshing, with a mix of sweetness and spiciness.

There is an exquisite, delicate balance between the refreshing and fruity aromas and the subtle taste of rice.

At the end, the gentle bitterness and astringency make you feel refreshed.
