The late Shinsaku Sugiyama, a doctor of brewing science from the University of Tokyo, who taught Yoshikawa Brewery in the past, makes a unique yeast starter.
The essence of this is that, while based on Yamahaimoto, the brewer himself determines the best timing for adding yeast in the fast-fermenting process.
A “rankokoushin” of traditional Yamahaimoto and modern fast-fermenting. This sake pursues the doctor’s ideal of “refined refinement.”
It is an all-rounder sake that can be enjoyed at any temperature and with any dish. (Iuchi Tomoaki)
