This pure rice sake is brewed based on the brewing philosophy advocated by the late Dr. Shinsaku Sugiyama, a doctor of agriculture from the University of Tokyo, which has been passed down in the brewery.
Kame-no-o rice, known as the “mythical sake rice,” is lightly polished and the mash is fermented at low temperatures for a long period of time, resulting in a flavor that is packed with the gentle, full-bodied, rich umami that only this rice has.
